Hot Chocolate Porter Cake

¾ Cup + 2 tbsp Salted Butter

2 ½ Cups Cake Flour

2 tsp Baking Powder

½ tsp Baking Soda

½ tsp Salt

3 Eggs, separated

3 oz. Unsweetened Baker’s Chocolate

1 1/3 Cups Sugar. Melted

1 Cup Ravens Hot Chocolate Porter (pour the rest for yourself)

 

Frosting:

1 lb semi-sweet chocolate chips

2 tbsp butter

5 tbsp milk

 

Cake:

-       Preheat oven to 375 F, Lightly grease two 9 inch cake pans with 2 tbsp butter, ¼ cup flour.

-       Mix remaining 2 ¼ cups flour, baking powder, baking soda, salt.

-       Beat egg whites with 2 tbsp sugar until stiff peaks form

-       Cream remaining sugar with ¾ cup butter

-       Add egg yolks, melted chocolate, beer

-       Beat in flour mixture

-       Fold in egg whites

-       Bake 30 minutes

-       Let cool

 

Frosting:

 

-       Soften chips, butter in double boiler

-       Beat 1 min.

-       Add milk, beat

-       Apply to cake

-       Top with Fresh Strawberry
